Sambar Powder / Podi ~ Indian Spice Powder

Dear Friends,
Sambar, mmmmmm……….. Goes well with rice and papad, idly, dosa, pongal……. All south Indian tiffin items……
Ingredients:
Channa dal / Bengal gram – ½ cup
Dry Red Chilies – 100 grams (More or less)
Cumin or Jeera Seeds – ½ Table spoon
Coriander or Dhaniya Seeds – 1 Cup
Fenugreek or Methi seeds – 1 Table spoon
Fennel or Sompu Seeds – ¼ th Table spoon (Optional)
Procedure:
1. In a Pan dry roast Channa Dal evenly for about 2 minutes in a medium flame. You need to fry all the spices separately. Because, time taken to roast chana dal is more compared to other spices so better to roast them separately.
2. Now dry roast Dhaniya. Then roast methi. Then Jeera and sompu. Finally roast red chilies.
3. Allow all the spices to cool to room temperature before grinding them. Grind the spices in a mixie or blender coarsely.
